Classic Matzah Brei

This might be a traditional Pesach breakfast food, but in our house we enjoy this classic dish year-round. This is the most basic version of matzah brei, which is the kind I like best.


Ingredients:

3 square matzah pieces, broken into pieces

2 eggs

1/2 tsp salt

Pepper, to taste

Oil, to fry with


Directions:

Place the matzah pieces into a container or bowl. Cover it with water and allow the matzah to soak for about two minutes. Drain the excess water out of the bowl. Add the eggs, salt and pepper to the wet matzah. Mix well to combine. Heat the oil in a frying pan or on a griddle. Drop big scoop full of the matzah mixture onto the oiled pan or griddle. Fry until set on one side, flip, and then fry one the other side. Once both sides are crispy, the matzah brei is ready.


This recipe is perfect for when you have lots of people to feed, because it is great at math. It multiplies well:)
