My family loves spicy food, but I really don't. And since I do most of the cooking in our house, spicy doesn't happen very often. So, when I made this coleslaw, you should have seen how surprised they were. The kick you get from the radishes and mayonnaise-based horseradish sauce is refreshing, but not too overpowering. If you want more kick, double the horseradish sauce. If you want less, leave it out. And don't forget to serve this at your next barbecue!
Ingredients:
2 prepackaged coleslaw mix
2 scallions, sliced
2 radishes, quartered and slice
1 c mayonnaise
1/4 c store-bought horseradish sauce
1/4 c sugar
1/2 c water
1/4 c white vinegar
Directions:
In a large salad bowl, combine the coleslaw mix, scallions, and radishes. In a small bowl, mix together the mayonnaise, horseradish sauce, sugar, water and vinegar. Beat together well and pour over the coleslaw mixture. Toss to coat. Store in the refrigerator for several hours or overnight. Serve cold.
