You know how there are somehow always some broken pieces of lasagna noodles in the box every time you make lasagna? I like to save mine and make this soup with them. This Creamy Spinach Lasagna Soup is a delicious meal in a bowl that you will want to make over and over again.
Ingredients:
1 onion, diced
2 medium carrots, peeled and diced
1 stick celery, diced
10 oz frozen spinach or 3 c fresh
2 Tbsp oil
15 oz can tomato sauce
16 oz jar marinara sauce
6 lasagna noodles, broken into small pieces
10 c water
1 tsp salt
4 oz cream cheese
6 oz plain Greek yogurt
2 c shredded cheese
Directions:
Heat oil in a large soup pot. Add in the onions, carrots, and celery. Sauté for 5 minutes, until the veggies begin to soften. Add the spinach. Cook until wilted or thawed. Add the tomato sauce and marinara. Cook for 5 minutes, occasionally stirring. Add the water, salt and broken noodles. Cook on a simmer until the pasta is ready. Mix in the cream cheese, yogurt, and shredded cheese. Stir until well combined. Serve!
