This Green Salmon and Beans dish is so simple and requires almost no cleanup. What could be better! Prepared all together on a sheet pan, the salmon and green beans are a perfect summer meal. And if you don’t have fenugreek, no worries…just leave it out.
Ingredients:
1 side of salmon or 6 fillets
24 oz frozen green beans
1 tsp salt
1 Tbsp dried dill
1 Tbsp dried parsley
½ Tbsp dried mint
½ tbsp dried fenugreek
2 Tbsp oil
Directions:
Preheat the oven to 400°F. On a large prepared sheet pan, spread the green beans on one side and place the salmon, skin side down, on the other. Sprinkle everything with the salt, dill, parsley, mint, and fenugreek. Spray the top of the salmon with cooking spray. Drizzle the oil over the green beans and gently toss them to coat. Place the sheet pan in the oven and cook until the salmon is done and the green beans are ready, 20-25 minutes. Serve hot or cold.
