Orange Ricotta Scones

Not overly sweet, these Orange Ricotta Scones can be eaten plain or with a shmear of jam or butter (my personal favorite). And yes, it really needs the orange zest, but it is worth the extra minute (that's really all the time it will take) that zesting the orange will take. Trust me.


Ingredients:

2 c flour

1 c Ricotta cheese

1 Tbsp baking powder

1 egg

1/2 c sugar

1 tsp vanilla

Zest from 1 orange

2 Tbsp milk

1 Tbsp turbinado sugar for sprinkling


Directions:

Preheat the oven to 400° F. In a bowl, combine the flour, ricotta, baking powder, egg, sugar, vanilla, and orange zest. Gentle mix together and then knead into a slightly sticky dough. Roll into a ball, then gently flatten into an 8 inch circle. Cut into triangles (as you would cut a pizza or a pie). Transfer the triangles onto a prepared baking sheet. Gently brush the tops of the scones with the milk and then sprinkle the turbinado sugar over them. Bake until golden brown. Serve with jam, butter, or cream cheese, or just eat them as they are. Delicious!
