Ricotta Gnocchi

Gnocchi are cute little dumplings that taste perfect treated similarly to pasta. Toss them with marinara or drench them in a butter or cheese sauce. These Ricotta Gnocchi are a little different than your classic potato Gnocchi. There are made with ricotta and parmesan cheeses, pumping up the protein content of the dish dramatically. And they are so good!


Ingredients:

1 lb ricotta cheese

1 cup parmesan cheese

2 eggs, beaten

1 tsp salt

1/4 tsp pepper

1 1/4 cup flour, plus more for dusting


Directions:

Combine all of the ingredients in a mixing bowl and knead into a dough. Roll into a long 1 inch diameter log and cut into 1 inch pieces, flouring your hands and rolling surface as needed. Bring a pot of salted water to boil. Drop the pieces into the boiling water, a few at a time. Gently stir the Gnocchi to prevent sticking. Once they float to the top, they are cooked and you can remove them from the pot. Toss in butter or marinara, etc and enjoy!
