Happy Chanukah! These Scallion and Cheddar Latkas, also known as pancakes, are a great change from the traditional potato latkas everyone loves. They are light, cheesy and flavorful, and oh so easy to make (I make mine on an electric griddle). Try these today for breakfast, lunch, or dinner!
Ingredients:
1.5 c
1 tsp baking powder
1 tsp salt
1 c shredded cheddar cheese
3 eggs
1 c milk
1-2 scallions, thinly sliced
Directions:
Mix all ingredients together in a bowl. Fry in a pan or on a heated griddle. Enjoy!
