This recipe for Persian meat and potato latkas (pancakes) are a favorite in our house. They are pretty simple to make, full of flavor, and a great way to change up your Chanukah menu or add some Middle Eastern flair. My husband’s family will eat these in a sandwich with herbs and tomatoes, but my kids like them eaten straight off the plate.
Ingredients:
2 large baking potatoes or 4 palm-sized potatoes, peeled and diced
1 lb ground beef
1 onion, minced
2 eggs
2 tbsp flour
1 tsp cumin
½ Tbsp salt
½ Tbsp turmeric
Oil for frying
Directions:
Place diced potatoes into a large pot. Cover potatoes with water and add some salt (a teaspoon or so). Bring to a boil. Cook until the potatoes pierce easily with a fork. Drain the water. Mash the potatoes until pretty smooth. Allow to cool for a few minutes. Add the ground beef, eggs, flour, cumin, salt, and turmeric to the potatoes. Mix together well. Scoop plum-sized amounts and shape into burger/ latka shapes. Frying in oil in a pan on the stovetop or place onto a well-oiled sheet pan and cook at 400° F until browned on the both sides, flipping halfway through. Serve warm or cold.
