When it is cold outside, you just want something warm and comforting for dinner. Stuffed peppers just might be what you are needing: little bundles full of flavor and an entire meal in one dish. To make this in your crockpot, prepare the peppers and sauce. Place the peppers in the crockpot. Pour the sauce over the peppers, cover, and set on low. Cook for 6-8 hrs. (If you are leaving on for 8 hours, add an extra 1/2 c water to the sauce).
Ingredients:
1 onion, diced
2 lb. ground beef
15 oz can tomato sauce
2 c rice, uncooked
2 eggs
2 Tbsp dried parsley
½ tsp paprika
¼ tsp chili powder
½ tsp salt
1 c water
8- 10 bell peppers, seeded
Sauce:
2 Tbsp oil
30 oz tomato sauce
¼ c sugar
½ tsp salt
½ tsp paprika
¼ tsp chili powder
1 onion, diced
1 stalk celery, diced
1 carrot, peeled and diced
2 c water
Directions:
Cook ground beef and onion together in a large pan. After the beef is cooked, add in the tomato sauce, rice, eggs, parsley, paprika, chili powder, salt and water. Stir together. Place the peppers in a prepared baking pan or pot. Fill each pepper with the ground beef mixture. If you have extra, leave in the pan to add to the sauce. Back in the pan, heat the oil and add the onion, celery and carrot. Sauté for several minutes, until they begin to soften. Add remaining ingredients. Pour sauce over and around the stuffed peppers. Cover the pan and bake at 350°F until everything is softened, at least one hour.
