I haven't posted any recipes in a while and since I recently had a request for this Surimi Coleslaw recipe from a good friend, I figured I would share it with all of you! This is a perfect summer salad. It is light, refreshing, and cool, and as a bonus, it has protein too! Of course, not needing to turn on your oven to prepare this super quick dish is also part of what makes this a terrific summer side (or main dish, if you prefer). Enjoy!
Ingredients:
1 lb. bag shredded cabbage
1/2 lb- 1 lb surimi sticks, shredded (your choice as to how much flavor you want)
6 scallions, shredded
1/4 c sliced almonds (optional)
2 Tbsp sesame seeds
1/2 Tbsp garlic powder
1/4 c soy sauce
2 Tbsp rice vinegar
1/2 Tbsp hoisin sauce
1/4 c mayonnaise
Directions:
Combine the first three (or 4 if you are including the almonds) ingredients in a serving bowl. Mix the remaining ingredients together and pour over the coleslaw mixture. Toss well to coat. Refrigerate until serving.
