With Rosh Hashana just around the corner, I find myself cooking and baking a lot with honey. And while my favorite Rosh Hashana treat, hands-down, is honey cake (recipe in my cookbook), these honey cookies are a close second. With a crispier exterior than the usual honey cookie, and that warm burst of honey flavor, you really can't go wrong.
Ingredients:
2 c flour
1 Tbsp baking powder
½ tsp salt
¼ c honey
¾ c oil
1 tsp granulated instant coffee powder
1 egg
¾ c brown sugar
Topping:
3 Tbsp sugar
½ tsp cinnamon
Directions:
Preheat the oven to 350° F. Combine the flour, baking powder, and salt and set aside. In a mixing bowl, cream together the honey, oil, coffee granules, eggs, and sugar. Add in the dry ingredients and beat until fully mixed together. In a small bowl, combine the sugar and cinnamon. Drop teaspoon amounts of dough into the cinnamon mixture and roll to coat the cookie dough. Place on a prepared cookie sheet and bake until golden brown. Enjoy!
