It is hot outside and you need something cool and refreshing to eat? You don't have to eat ice cream (although I can definitely understand if you want to). You can eat something juicy and full of intense summer flavor. This Tomato Basil Salad is so quick to throw together and lasts really well in the refrigerator, so make some and serve it with your next meal.
Ingredients:
1 pint grape or cherry tomatoes, halved
½ red onion, diced
½ c sliced black olives, drained
3-4 fresh basil leaves, chopped or 1 Tbsp dried basil
1 tsp salt
1 Tbsp balsamic vinegar
¼ c olive oil
Directions:
Combine all ingredients in a bowl and toss together. Refrigerate until serving.
Variation: Worried that you have too much left over? Use this salad as a filling in your next omelet, plus a sprinkling of parmesan cheese. Yes. Really. I know that sounds weird, but trust me this once. It is awesome. You're welcome.
