I love pasta, but I don't usually have the patience to make a fancy pasta dish. First cook the pasta, then fill it, and then bake it? Sounds like too many steps. I don't have time for that. So I came up with this little shortcut. These Unstuffed Shells taste delicious, with a lot less work.
Ingredients:
24 oz frozen spinach, thawed and drained
1 red or orange pepper, diced
10 oz frozen chopped onion
2 Tbsp oil
2 packages large shell pasta
6 c water
2 c milk
1 lb ricotta cheese
3 c shredded cheese
Directions:
In a large pot, sauté the spinach, pepper, and onion in the oil unti the vegetables are softened. Add the water and shell pasta. Bring to a boil. Once boiling, add the remaining ingredients, cover, and cook while stirring occasionally until the pasta is fully cooked. Serve warm.
